In the last few years, quinoa has become one of the buzziest food items on the market, and its popularity continues to grow. Case in point: “Quinoa” is one of the top search terms on this website week after week, alongside classics like “chicken” and “pasta.” (We also once saw a 30-something woman on the verge of a nervous breakdown at Whole Foods because she thought the store was out of it.)

Commonly mistaken as a grain, quinoa is actually related to leafy green plants like Swiss chard and spinach, and is exceptionally healthy because of the quantity and the quality of protein it offers. (Nutritionists often say it is a “complete source of protein,” meaning it has contains all nine essential amino acids.) NASA praised it in the ’90s as one of the most efficient life-sustaining foods, and Incan warriors worshiped it for the stamina it provided. Hard core!
