We’ve a garden that’s bursting with healthy greens and a Gravenstein apple tree that’s loaded to the gills — if apple trees had gills — with fruit. Time to put that home-grown goodness to good use!
This meal is a quick one to whip up, hearty, and speaks to the coming of autumn (gulp!).

Bratwurst with kale, apples & onions.
Serves 2
4 large leaves kale, ribbed and chopped
1 medium onion, halved pole to pole and sliced thin
1 large tart apple, cored, halved and sliced thin
1 tablespoon olive oil
1 teaspoon seasoned rice wine vinegar
salt & pepper to taste
2 bratwurst
Heat grill or grill pan to medium-high heat.
Heat a large nonstick skillet over medium-high heat. Add olive oil then chopped kale, onion and apple. Allow to cook until kale is wilted and onion and apple are soft, about 8 minutes. Remove from heat, add salt and pepper and seasoned rice wine vinegar. Set aside.
Meanwhile, cook bratwurst on grill until cooked through, about 5 minutes per side for raw sausages (pre-cooked sausages will take about half that amount of time).
Divide kale mixture between two shallow bowls. Place cooked bratwurst on top and serve with some spicy, whole-grain mustard and gluten-free beer alongside.
