We love granola but frankly, in the gluten free realm, it can get little pricey. Most often we make our own granola using Bob’s Red Mill GF Oats but sometimes life gets in the way and there is a void in our morning yogurt and fruit ritual that leaves us craving heartiness (and our stomachs grumbling). To hedge off the hunger, we’ve found we can simply buy nuts and seeds in bulk and just mix them together on the fly to add texture, protein and fiber to any meal.

We prefer using raw, rather than roasted, nuts and seeds (and we’ve even been known to throw in some unsweetened coconut flakes for a nice tropical chew!). With our ingredients all lined up, we throw a pinch of each on top of our yogurt in the morning or the afternoon and add either fresh or dried berries, depending on the season. This delicious, healthy topping works well on fruit, yogurt, ice cream and salads.

Some of the benefits of including this topping in your meal are the inclusion of the following nutrients that we might not be otherwise getting enough of.

Almonds
packed with nutrients and high in monounsaturated fats, which will help you keep your heart healthy.

Pumpkin Seeds (aka pepitas)
packed with fiber, vitamins, minerals and numerous health promoting antioxidants.

Flax Seeds
rich in fiber and omega 3-fatty acids.

Unsweetened Coconut
high in dietary fiber.
