We consider ourselves incredibly fortunate that there are so many gluten-free dining and shopping options here in Northern California. One of our very favorite grocery stores is Andy’s Produce in Sebastopol, Calif. where an entire aisle is packed with some of the best gluten-free products around. You’ve got yer Mama Baretta breads & cookies, a whole bunch of Pamela’s Products, Mi-Del, Gluten Free Pantry, Udi’s, Rudi’s, Legacy Valley, Cherybrook Kitchen, Enjoy Life, and so many more yummy and wholesome snacks.
Not long ago, our little eyes spied a new addition to the deli case. Hint: it was round and cheesy. Mini gluten-free take ‘n’ bake pizzas!

We have hearts in our eyes for Andy’s Produce – who has always offered full-size glutenous take ‘n’ bake pizzas — for considering their GF shoppers and adding these mini pizzas to their gluten-free offerings. Assembling these pizzas in-house, they start with Glutino’s Premium Pizza Crusts as the base, and then whip up four varieties: pepperoni, cheese, combo, and hawaiian. The pizzas are small — about 6-inches around — and are sold in a pair for $10.99. We snatched up a pepperoni and a cheese pizza, then got right back to The Lab and immediately turned the oven — with the pizza stone set on the oven floor — to hot, hot, hot! (That’s 400°F.) An hour later we were ready to bake! Both pizzas went in at once and they took about 15 minutes to get crispy on the bottom and golden brown on top.
The whole experience was surprisingly delicious; the Glutino crusts got nice & crackery from baking on the pizza stone, but they were slightly puffy and bready, too (crowd-pleaser!). With the crust hurdle successfully crossed, the rest of the pizza was just icing on the cake. Or, er…cheese on the pizza. The toppings were yummy, although perhaps a little thin. Next time we might pick up a couple of cheese pizzas and treat them as blank slates: add a little sliced mushrooms, some sliced black olives, a couple thin shavings of Parmesan cheese, and a few slices of Serrano ham in the last couple of minutes of baking. Now that’s an easy meal!
Mmm, we know what we’re having for dinner tonight!
